Banana infused with rum*, pandan honey*, lemon juice, Lavender Hive Bubbles by Nico de Soto

Ingredients

10mL - Lemon juice

*For the rum-infused banana (20mL)

1 bottle of rum

3 peeled bananas

2% pectinex

*For the pandan honey (10mL)

Lavender Hive Bubbles

Hot water

Pandan leaves

Shaker

Coupette

*Rum-infused banana
Put all the ingredients in a centrifuge for 1 hour.

*Pandan honey
Mix 3 parts lavender honey to 1 part hot water. Cook under vacuum for one hour with 3 pandan leaves per litre.

Mix it all together.
