250g lychee honey

2 star anise

2 cinnamon sticks

60g fresh ginger

10g coriander seeds

125g mascarpone

125g liquid cream

25g lychee honey

60g soft butter

60g flour

60g brown sugar

10g ginger powder

80g lychee honey

60g soft butter

140g liquid cream

Preparation

Make the crumble.

Poach the apricots in the spiced syrup for 25 minutes.

Make the caramel sauce.

Make the mascarpone cream with honey.
